Greek Style Salad – Feta, Croutons

Today, I’m presenting you the Queen of salads. My absolute favourite. A fantastic way to incorporate vegetables in your diet but also provide your body with a variety of important nutrients, and – most importantly – feed the hunger with delicious flavours.

This salad is a great proof that not all salads are boring, low calorie rabbit food that will satiate you for maybe 30 minutes, if lucky. This one is more of an every day balanced meal, full of flavour and healthy sources of carbs, protein, fat and numerous vitamins.

The choice of leafy greens is up to you. I tend to buy salad mixes to keep my salads varied and interesting, but if you happen to have a whole head of some lettuce laying around in the fridge, feel free to use that.

Whether you choose regular or low fat cheese is also down to your preference. Personally, I prefer to use low fat feta. Not because fat is bad (it’s not! it’s an essential nutrient and you wouldn’t be able to absorb some vitamins without it), but because this salad has other, healthier sources of fat. Full fat or low fat, feta will add some protein to this salad. You can even replace feta with mozzarella – it won’t be that much of a Greek style salad anymore, but still delicious and balanced in nutrients.

Wholemeal croutons add even more fiber to this salad, and although not perfectly healthy, they add a nice crunch and flavour, as well as whole carbs – and anything that encourages eating a salad is a good extra!

Now, before anyone gets offended by calling this salad Greek – I call it loosely inspired Greek style salad, but certainly don’t claim authenticity πŸ™‚

Lettuce, olives, tomato, cucumber, feta cheese annd croutons

Ingredients:

  • salad mix (various types of lettuce, cabbage – whatever you prefer)
  • cherry tomatoes
  • cucumber
  • low fat feta cheese
  • green olives (or black, if you prefer)
  • splash of olive oil
  • mixed Italian herbs (basil, oregano)
  • wholemeal croutons

Halve tomatoes. Slice and halve cucumber. Cut feta into cubes. Halve olives.

Mix everything. Enjoy! πŸ™‚

Ingredients

  • salad mix
