Time for another recipe. During the months when I wasn’t able to post, I still had to eat sometimes, so I now have a ginormous pile of recipes waiting to be published. Today, a recipe for simple savoury muffins – perfect to add to a lunchbox!
For about 16 you’ll need:
- 200g plain flour
- 200g whole wheat flour (can be replaced with plain flour)
- 125g butter
- 250ml milk
- 2 eggs
- 2 teaspoons baking powder
- 1 red bell pepper
- 200g feta cheese
- a handful of green olives
- salt, pepper, paprika, nutmeg
Pre-heat the oven to 170°C.
Wash the pepper and brush it with olive oil. Bake it for 45 minutes. After that time, take it out of the oven and immediately put it in cold, salted water. Leave it there for a few minutes. You should be able to take the skin off the pepper easily (don’t worry if you can’t get some bits off).
Switch the oven to 200°C and let it heat up while you mix the dough.
After peeling the pepper, dice it.
Dice the olives too, cut of crumble feta cheese.
Melt the butter and let it cool a bit.
Mix both flours in a bowl. Add baking powder and the spices.
In another dish, mix melted butter with milk and eggs. Pour the mixture into flour, add pepper, olives and feta. Stir until the ingredients have roughly combined (don’t over do it, muffin batter doesn’t like being stirred too much).
Fill muffin moulds with the batter.
Bake for 20-25 minutes in 200°C. Enjoy!
