Who doesn’t love peanut butter? Or even better, peanut butter and jelly combo? Typically seen on toasts, but I decided to try a different approach and made peanut butter pancakes and some quick, home-made strawberry jam. The combination turned out great, if I say so myself! It can also be gluten-free, provided that you buy certified oat flour. These pancakes will make a perfect, slightly indulgent but also quite healthy breakfast. Yummy!
If you’ve been following my blog for a while, you may know that porridge is one of my favourite breakfasts. It’s tasty – but healthy, full of flavour – but quick to make. I usually make my breakfast porridge at work, in a quick, cooking-free version with yoghurt. However, when I’m at home – usually on weekends – I like to cook proper porridge, with milk, on the hob. So, without further ado, here’s my recipe for banana and peanut butter porridge!
If, just like me, you’re an unconditional fan of peanut butter – you’re going to love these cookies. Flourless – therefore, gluten-free – they’re mainly based on peanut butter – and that’s where they get their taste from. And although it might be surprising, I’d actually place them on the healthier side of cookie recipes – there’s no flour or regular butter – they’re replaced by peanut butter, which – despite being high in calories – happens to count as healthy food. The only unhealthy part of the recipe is sugar – yes, there’s probably a lot of it, but I still believe overall these cookies aren’t that bad, compared to some other recipes!
