11 Cosy Recipes For Sunday Breakfast At Home

Eat breakfast like a king, lunch like a prince, and dinner like a pauper – I definitely live by that rule. Breakfast is my favourite time of day. On weekdays, I typically go for quick options, alternating between yoghurt & granola bowls and scrambled eggs (with chili crisp!). But on weekends, I like to treat myself with delicious breakfasts that take a little longer to make – but not too long, don’t worry! I looked through my previously posted breakfast recipes to bring you a list of my favourites. Here’s 11 delicious breakfast recipes perfect for a Sunday breakfast at home.

Baked breakfast cups

Let’s start with a fun, versatile idea – baked breakfast cups. Imagine a toast with ham, cheese, egg, and veggies… but baked in a cup, so you can take it out and eat like a muffin. Yum! They’re easy to make, and you can swap the toppings for whatever you happen to have in the fridge. It’s a great way to use up some leftover veggies!

Moist, fluffy, high protein pancakes (without protein powder)

Now, is there a cosier breakfast food than moist, fluffy pancakes? I don’t think so! This recipe started as an experiment – I mixed together a few ingredients, and the rest is history. I’ve made these delicious pancakes dozens of times over the last couple of years, and I don’t think I’ll ever get bored of them. These pancakes are also high in protein, but don’t let this put you off! There’s no protein powder or other artificial ingredients in them. In fact, you only need a few basic items that can be mixed with a fork. You can enjoy these pancakes with your favourite toppings.

Apple fritters

And if you fancy a fruity variation of the recipe for perfect pancakes, you should try these apple fritters. Apple fritters were a staple in my family when I was growing up, especially in the autumn, when apples are in season. It’s super easy to make them – you just need to thinly slice an apple and remove the core, essentially ending up with apple rings. Then, you need to dip them in pancake batter and fry on low heat. Sprinkle them with icing sugar, and you’ve got yourself a cosy, delicious meal. Yummy!

Polish crepes with sweet quark cheese

Growing up, the only pancakes I knew were crepes (and the apple fritters above). We never had American style, fluffy pancakes. I didn’t really know them at all! I guess it makes sense, being European – I lived way closer to France than America.

Usually, my Mum would make the crepes, and I would dress them up on my plate – most often spreading jam on them and rolling them up. But sometimes, we would have a more elaborate version – crepe envelopes, filled with sweet quark cheese filling. They’re so good! I highly recommend giving them a try. Bounty porridge

Moving on from pancake-like recipes, how about a cosy porridge? It’s not everyone’s cup of tea, but some of us – myself included – love a good bowl of porridge. On this blog, I posted several recipes for porridge. One of my favourites was a Bounty-inspired recipe for coconut porridge with chocolate chips. Controversial, I know – not everyone likes Bounty bars. But personally, I find coconut and chocolate delicious!

Chocolate cherry quinoa

And if you like a porridge but want to try something new, how about a chocolate quinoa bowl? That’s right – a hearty porridge doesn’t have to be made with oats! Chocolate & cherry is one of my favourite food combos, and it works really well in a breakfast bowl. This quinoa bowl is easy to make, and always hits the spot – especially on cold mornings.

Aromatic high protein gluten-free bread

If you’re not a fan of sweet breakfasts and fancy something savoury, is there anything better than fresh bread? This high protein, gluten-free bread recipe is the most popular post on my blog, with over 150 thousand views. And rightly so! Even if you don’t care about protein and gluten, you should give it a go – it’s simply delicious. Soft on the inside, crispy on the outside, smelling of nigella seeds. It will make a delicious sandwich, but honestly, I love to just grab a slice of this bread as a snack. It takes a while to bake, so if you don’t want to wait for the bread to bake in the morning, you can prepare the evening before. It will still be delicious the next day!

Quick high protein bread rolls

Staying in the bakery category, how about fresh, warm, home-baked bread rolls for breakfast? These rolls are super easy and quick to make – about a 10 minute prep, followed by 20 minutes in the oven. I’d say it’s worth it! They happen to be high in protein, and they’ll make a great foundation for a sandwich, sweet or savoury.

Shakshuka

If you fancy an oriental twist on eggs, you need to try shakshuka. These poached eggs in seasoned tomato sauce are a delicious, warming dish to start the day. They will go really well with home-baked bread from one of the previous recipes!

Giant savoury pancake

Let’s revisit pancakes, but in a savoury variation. Sometimes, cooking just for myself, I fancy a giant pancake, all to myself. Being in my healthy eating / high protein era, I crafted this recipe for a high protein savoury pancake for one, which I enjoyed on Pancake Day earlier this year. With some spicy ketchup spread on top, it always hits the spot.

Spring omelette

And finally, I can’t not mention omelettes. It’s been a hot minute since I last made one, but when I have an omelette phase – which usually comes once every year or two – I eat it every other day for weeks. Excuse the quality of the photo, this recipe is one of my oldest posts on this blog, published over 9 years ago!
