If you’ve been following my blog for a while, you will know that I love porridge. It’s quick, it’s healthy, it’s nutritious, and you can experiment with the flavours and toppings, so it’s never boring. Just like I love my porridge, I love my sweets. I used to hate coconut as a child, but as I grew older, I began to love it. Now, I love coconut in both savoury dishes (hello, delicious curry) and sweets, and Bounty chocolates are high on my personal top tier sweets list.
Bounty chocolates were on my mind when I was about to prepare breakfast one day, and an idea formed in my head. What if I make Bounty – coconut and chocolate – flavoured porridge? I went through my kitchen cupboards and found everything I needed. The result was just heavenly. I know I say it every time I come up with a great recipe, but I’ll say it again nonetheless – it’s definitely one of my new favourites! The combination of coconut and chocolate makes it feel more like dessert than breakfast, but it’s still packed with great nutrients – healthy fats from the coconut, good carbs and macro elements from the oats and a little protein. It’s also fairly low-sugar, without any extra sweeteners – a little bit of chocolate drops and the coconut itself are enough to make this porridge sweet. If you’re looking for a feel-good(-and-not-guilty) breakfast and enjoy the combination of coconut and chocolate, give this recipe a go!
Ingredients (serves 1):
- 1/3 cup oats
- 1/3 cup boiling water
- 1/4 cup desiccated coconut
- 1/4 cup coconut cream
- 1/2 cup milk
- chocolate drops
Put the oats in a pot. Add boiling water and leave them for 5 minutes.
Add the remaining ingredients, except the chocolate drops. Put on the hob on a small heat and cook for about 10 minutes, stirring constantly.
Pour the porridge in a bowl and sprinkle with chocolate drops.
Enjoy!

Ah, coconut can be controversial. I used to passionately hate it as a child and now I love it!

Porridge is a great compromise when you want to try to eat healthily but also like something sweet for breakfast 🙂 So much better than the sugary breakfast cereals!
