I love seasonal summer fruits. Who doesn’t? Winter gets so boring when the only fresh, tasty, widely available fruits are apples and bananas. That’s why in summer my each trip to a supermarket ends with some fresh fruits in my bag, and a few days later I have a bunch of very ripe fruits that need to be used as soon as possible. And what’s the best way to use ripe fruits? Making a smoothie, of course.
Smoothies are also a great way to sneak some leafy greens to our diets. Even a full handful of them won’t overpower the sweet, ripe fruits in taste, but their vitamins and other nutrients will still be there.
This time, I had some leftover coconut water from a fresh coconut that I’d bought. It’s not that tasty alone, in my opinion, but I though I could use it for a smoothie and it was a success. It added some very subtle coconut note to the smoothie.
Ingredients (serves 1):
- 1 banana
- a small handful of strawberries
- 1 peach
- a handful of leafy greens
- 1/3 cup (coconut) water
Blend all the ingredients and enjoy your tasty, healthy smoothie! π
