High Protein Vegetarian Lasagne (+Vegan Swaps)
The start of the year is for many the time to pursue New Year’s resolutions. One of the most common ones is trying to live a healthier lifestyle, manifested by attending the gym and eating nutritious, home made foods. Another popular trend is Veganuary, where lots of people try to follow a vegan diet in the month of January.
In this post, I’m going to share a versatile, adaptable recipe that will work for both goals. It’s one of my favourite recipes to make these days. Healthy, nutritous, and high in protein – yet still delicious and comforting, like traditional lasagne is. What’s not to love!

Today, I want to share one of my new favourite recipes. I mentioned it in my July 2021 post as one of my greatest discoveries of the month. Aromatic and full of flavour, this Thai basil ketjap manis turkey is extremely versatile and will perfectly work as the meat protein source on your lunch/dinner plate, accompanied by a source of complex carbs (think rice or pasta) and some steamed veggies (I recommend tenderstem broccoli). It can also be used in stir fry, wraps, or even as a sandwich filler!
Vegan Black Beans and Avocado Quinoa
I feel like every time I post a recipe, I say it’s my recent amazing discovery and the best thing in the world. This time… it’s not going to be any different! I want to share with you a recipe I’ve been loving for the past month. Vegan and high protein, if anyone’s in the market for that. 🙂
Greek Style Salad – Feta, Croutons
Today, I’m presenting you the Queen of salads. My absolute favourite. A fantastic way to incorporate vegetables in your diet but also provide your body with a variety of important nutrients, and – most importantly – feed the hunger with delicious flavours.
Zesty Thai Basil Pork
Stir fries are definitely some of my favourite savoury recipes to cook. Can there be anything easier than just frying all ingredients in one pan? I first heard about Thai basil pork from a friend a few weeks ago and it instantly had my attention. I generally love Asian cuisine, but I only ever cooked curry stews. An oriental, Thai stir fry with basil and lime sounded too good not to try it. And so I did.
Quick Couscous Carrot Chicken Stir Fry
You feel hungry, open the fridge and realise there isn’t much to work with. Sounds familiar? That’s how I came up with this recipe – the recipe that’s now, about 5 years later, a staple in my family. Sometimes made because the fridge is empty and no one has gone to the supermarket, but sometimes made because it’s quick and we genuinely like it.
Healthy Oven Baked Chips – Potato Wedges
Potato chips – also known as fries across the pond – are undoubtedly one of the most famous foods around the world. Served in fast food restaurants and often as a side in posh places. Chips made at home don’t taste that great though, especially if you don’t have a deep frying machine. But that doesn’t mean we can’t enjoy a delicious potato side at home! This recipe was perfected by my mum and it’s one of my favourite sides. A cross between chips and roasted potato wedges that will enhance many dinner ideas.
Chicken and Leek Pie
Being in lockdown, I had plenty of time to experiment in the kitchen. One of my favourite recent inventions is this chicken and leek pie. It was something I had on my mind for a long time, but also something I’ve never attempted before – nor anything remotely similar. I had a look online and found a few recipes for a pie of this kind, combined them all, added my personal touch… the results definitely exceeded my expectations.
Simple Cauliflower Vegan Curry Recipe
Is there any food better than spicy, aromatic, warming curry for this cold, miserable winter season? I don’t think there is! This is what keeps me alive in winter, I usually end up eating some kind of curry a few times a week. And what I love about it is how simple and quick it is to make – hardly any effort involved! You can easily multiply the ingredients and prepare dinner for a few days in one go – it tastes just as good when heated up the next day. 🙂
