We’re in July now, with half of this year gone. Who can believe this? Time flies so fast! My brain still feels like it’s 2019. I wanted to post a little recap of June 2021. Places I’ve visited, foods and activities I enjoyed. Join me on this little time travel if you wish. 🙂

Vegan Black Beans and Avocado Quinoa
I feel like every time I post a recipe, I say it’s my recent amazing discovery and the best thing in the world. This time… it’s not going to be any different! I want to share with you a recipe I’ve been loving for the past month. Vegan and high protein, if anyone’s in the market for that. 🙂
Greek Style Salad – Feta, Croutons
Today, I’m presenting you the Queen of salads. My absolute favourite. A fantastic way to incorporate vegetables in your diet but also provide your body with a variety of important nutrients, and – most importantly – feed the hunger with delicious flavours.
White Chocolate Berry Muffins
I found it. Years of searching and experimenting and finally, here it is. The best recipe for muffins. It works perfectly every time and the muffins stay moist (sorry to all those cringing at the sight of this word) for a few days. And what’s best is that you can use the base recipe and make it with various extras, and it will work. Berry muffins? Check. Kinder chocolate muffins? Check. Nutella muffins? Check. Bolognese muffins? Che… okay, let’s not go that far. But as far as sweet, reasonable goodies go – you can put them in these muffins and nail it.
Healthy Banana Pancakes
Although I have no data to back my theory, I will go ahead and guess that January is potentially the most common time for dieting. After all, who hasn’t, at some point in their life, decided to make healthy eating and working out their New Year’s resolution, in hopes to balance the Christmas overeating? However, I’m a firm believer that a healthy diet is a balanced diet, and radical dietary restrictions can do more harm than good in the long term. They’re also difficult to stick to for more than a few days. So what if I told you that pancakes can actually be part of a healthy diet?
16 Interesting Facts About Coffee
Who doesn’t like a random fun fact? It’s always great knowledge to use in pub quizzes, to throw in a conversation with friends or just to learn for our own satisfaction. Information sinks in so much easier in form of fun facts, doesn’t it? Today, I compiled a list about something I can’t live without – coffee. Grab your latte or americano, sit comfortably and enjoy. 🙂
Hazelnut Yule Log Cake
Happy 2021 dear readers 🙂 I hope after all the craziness of 2020, this new year will bring peace and slowly lead us back to normality.
Christmas is about 11.5 months away, but it doesn’t mean you can’t start gathering ideas for Christmas 2021 baking plans! Today’s recipe is one of my favourite cakes I’ve ever made – mainly because the final result always looks spectacular, and yet it’s really simple to make. A Yule log cake, with a hazelnut twist. Enjoy!
Zesty Thai Basil Pork
Stir fries are definitely some of my favourite savoury recipes to cook. Can there be anything easier than just frying all ingredients in one pan? I first heard about Thai basil pork from a friend a few weeks ago and it instantly had my attention. I generally love Asian cuisine, but I only ever cooked curry stews. An oriental, Thai stir fry with basil and lime sounded too good not to try it. And so I did.
Apple Crumble For One
If there’s one food item that just screams “autumn” to me, it’s apples. Not pumpkins, which are a thing for about 2 weeks around Halloween, not cinnamon (which does go well with apples though), but apples themselves. Today’s recipe is an idea for healthy, autumnal dessert for one. Living alone, I can’t always justify baking a whole cake and recipes that make a small portion are incredibly useful.
Quick Couscous Carrot Chicken Stir Fry
You feel hungry, open the fridge and realise there isn’t much to work with. Sounds familiar? That’s how I came up with this recipe – the recipe that’s now, about 5 years later, a staple in my family. Sometimes made because the fridge is empty and no one has gone to the supermarket, but sometimes made because it’s quick and we genuinely like it.
