I usually cook just for myself, and heating up a small air fryer seems more reasonable than a large oven. Also, just pre-heating a traditional oven alone takes as much time as cooking a full meal in an air fryer.

Ingredients for air fryer roasted root vegetables
- 1 large carrots, peeled and sliced
- 1 large parsnips, peeled and sliced
- 1 tablespoons olive oil
- 1 teaspoon of your favourite mixed herbs
- Salt and pepper to taste

Step by step recipe for air fryer roasted root vegetables
- Preheat your air fryer to 180°C (360°F).
- In a large bowl, toss the carrot and parsnip slices with olive oil, herbs, salt, and pepper until well coated.
- Arrange the seasoned vegetables in a single layer in the air fryer basket.
- Cook for 20-22 minutes, shaking the basket halfway through, until the vegetables are golden brown and crispy on the outside, and tender on the inside.
- Serve hot and enjoy!
How to make roasted root vegetables in a traditional oven
Don’t have an air fryer? No worries! You can still enjoy these delicious roasted root vegetables by using a traditional oven. Simply preheat your oven to 200°F (400°C) and follow the same instructions as above. Roast the veggies for 20-25 minutes, or until they’re beautifully caramelized and tender.
Other vegetables you can roast
The beauty of this recipe is its versatility. While carrots and parsnips are a classic combination, you can experiment with other root vegetables too! Try adding in some potatoes, sweet potatoes, bell peppers, red onion or beets for a colourful and nutritious side dish.

How long does it take for an air fryer to heat up?

Not long at all! Many air fryer recipes don’t even call for preheating the air fryer, you can place the food in a cold basket and then turn the air fryer on, and it should still turn out okay. I like to turn on my air fryer for a minute or two beforehand, but you can get away with skipping that part.

Preheating the air fryer for a minute or two will be more than enough, but to be honest you can even skip that part and place the food in a cold basket.
