I found it. Years of searching and experimenting and finally, here it is. The best recipe for muffins. It works perfectly every time and the muffins stay moist (sorry to all those cringing at the sight of this word) for a few days. And what’s best is that you can use the base recipe and make it with various extras, and it will work. Berry muffins? Check. Kinder chocolate muffins? Check. Nutella muffins? Check. Bolognese muffins? Che… okay, let’s not go that far. But as far as sweet, reasonable goodies go – you can put them in these muffins and nail it.

Healthy Banana Pancakes
Although I have no data to back my theory, I will go ahead and guess that January is potentially the most common time for dieting. After all, who hasn’t, at some point in their life, decided to make healthy eating and working out their New Year’s resolution, in hopes to balance the Christmas overeating? However, I’m a firm believer that a healthy diet is a balanced diet, and radical dietary restrictions can do more harm than good in the long term. They’re also difficult to stick to for more than a few days. So what if I told you that pancakes can actually be part of a healthy diet?
Hazelnut Yule Log Cake
Happy 2021 dear readers 🙂 I hope after all the craziness of 2020, this new year will bring peace and slowly lead us back to normality.
Christmas is about 11.5 months away, but it doesn’t mean you can’t start gathering ideas for Christmas 2021 baking plans! Today’s recipe is one of my favourite cakes I’ve ever made – mainly because the final result always looks spectacular, and yet it’s really simple to make. A Yule log cake, with a hazelnut twist. Enjoy!
Apple Crumble For One
If there’s one food item that just screams “autumn” to me, it’s apples. Not pumpkins, which are a thing for about 2 weeks around Halloween, not cinnamon (which does go well with apples though), but apples themselves. Today’s recipe is an idea for healthy, autumnal dessert for one. Living alone, I can’t always justify baking a whole cake and recipes that make a small portion are incredibly useful.
Red Velvet Cake with Blue Strawberry Frosting
Red velvet cake… with a twist? I wanted to attempt making the iconic cake for the first time, after eating it on a few occasions. Sadly, bright red cake with white cream cheese frosting isn’t a realistic, good idea anymore if you’re short on red food colouring and bake for someone with a white food phobia. The twists were a must. I found a recipe and adjusted it slightly – the final result exceeded my expectations!

Iced Berries
This recipe is one of my favourite discoveries of 2020. Extremely quick and easy to make, and I usually have all the ingredients available at home anyway. Perfect as a refreshing dessert in summer, but I can definitely see myself making it in winter as well.
Strawberry Banana Milkshake
Smoothies are undeniably one of my favourite things about summer. Fresh, delicious and healthy, work perfectly as a fix for my sweet tooth. Amongst all the smoothies there’s one I love more than any other. The classic, the one and only, strawberry and banana milkshake.
Lemonade Ice Cubes
Of all summer recipes there are two that belong to this season the most. The first one is ice cream – something I’m yet to attempt – and the second are ice cubes. You could say that ice cubes don’t need a recipe – you just freeze some filtered water and that’s it. And that’s true, you don’t need a recipe, but you can use one for a nice, fancy result.
Summer Smoothie
I love seasonal summer fruits. Who doesn’t? Winter gets so boring when the only fresh, tasty, widely available fruits are apples and bananas. That’s why in summer my each trip to a supermarket ends with some fresh fruits in my bag, and a few days later I have a bunch of very ripe fruits that need to be used as soon as possible. And what’s the best way to use ripe fruits? Making a smoothie, of course.
Carrot Cake With White Chocolate Cream
It’s been a while since I posted a layered cake recipe. This one is a great idea for when you need an impressive looking cake that’s simple and fairly quick to make. I generally love carrot cakes, but carrot cakes alone are often pretty dry, and get even drier the next day. This cake is fairly moist, and the white chocolate cream adds to it. It stays moist and tasty even one or two days later.
