Extremely sweet although with no sugar and hardly any sweeteners. Extremely tasty, and just as easy to make! Why spend money on store-bought cereal&nuts bars with poor ingredient lists when you can make a whole tin of them at home with close to no effort? Prep time is 10 minutes, including weighing the ingredients and chopping those that need to be chopped. π
For a small tin (8x15cm) you’ll need:
- 45g sunflower seeds
- 45g pumpkin seeds
- 45g flax seeds
- 45g sesame seeds
- 1.5 eggs ( π easier when you make a bigger tray with twice the ingredients. Use 2 small eggs/1 large or just 2 medium and leave a bit)
- 40g rolled oats
- 1 tablespoon of honey
- 175g of chopped up nuts or almonds (I used hazelnuts, walnuts, cashews, almonds, almond flakes and a little bit of dark chocolate)
- A sprinkle of cinnamon
Preheat the oven to 170ΒΊC.
In a cup, pour some hot water on the oats, just a little bit more than you need to cover them. Wait a few minutes, until all water has been absorbed. Combine all of the seeds and nuts. Add the oats in (crumbling them with your fingers – at this stage the oats are probably almost a solid block, you want to avoid having huge chunks of oats in the mixture). Stir well. Add the eggs, honey and cinnamon and stir again.
Put the mixture in a small tin and bake for around 50 minutes. Remove from the oven and leave in the tin to set until completely cool. Don’t be impatient or you’ll have a tasty granola! π The loaf has to set before you can cut it into bars – it will fall apart if you take it out of the tin too early.
