Gluten Free Peanut Butter Oat Bites

Let’s face it – the snack aisle can be a tempting but treacherous place. Rows upon rows of flashy packaging and enticing promises, but what about the stuff we can’t pronounce? That’s where homemade oat bites swoop in like caped crusaders, rescuing us from the snack-time dilemma. Not only are they ridiculously easy to make (seriously, a caveman could do it), but you also get to control what goes into them. No mystery ingredients, just pure, unadulterated yumminess that you can whip up in the comfort of your own kitchen.

Health Benefits of Oat Bites: A Snack You Can Feel Good About

Now, let’s chat about the health benefits because who said snacks can’t be both tasty and nourishing? Oats, my friends, are like the unsung heroes of the grains – packed with fiber, they keep you feeling full and satisfied, making them the MVP of your snack game. But that’s not all – they’re also a fantastic source of vitamins and minerals, including manganese, phosphorus, and magnesium. So, with each delightful bite, you’re treating your body to a nutrient-rich fiesta, all while conquering your cravings.

Nuts and Dried Fruit: The Dynamic Duo of Nutrition

And then we have the dynamic duo – nuts and dried fruit, the Batman and Robin of nutrition. Nuts, like almonds and walnuts, aren’t just there for the satisfying crunch; they bring healthy fats, protein, and a nutritional punch to the party. Picture this: your taste buds doing a happy dance while your body cheers for the added benefits. On the other hand, dried fruits, whether it’s the chewy sweetness of apricots, the tanginess of cranberries, or the classic raisin, add that perfect natural sweetness and a burst of essential vitamins. Together, they create a symphony of flavours and nutrition that will have you reaching for more.

How to make Peanut Butter Oat Bites with Nuts and Dried Fruit

Now, let’s dive into the kitchen alchemy that is the recipe for these Peanut Butter Oat Bites. Brace yourselves for a snack that’s not only easy to make but is also going to make your taste buds sing. Grab your apron, unleash your inner chef, and let’s get rolling – literally!

Ingredients:

  • 1 cup oats (certified gluten-free if needed)
  • 1/2 cup peanut butter (crunchy, 100% peanuts)
  • 1 egg
  • 3 tablespoons honey/maple syrup
  • 1/2 cup dried fruit and nuts and seeds – I used cranberries, mango , brazil nuts, almonds, pecan, hazelnuts and chia seeds
  • generous sprinkle cinnamon
  • pinch of salt

Instructions:

Preheat the oven to 190℃.

In a large bowl, mix together the oats, peanut butter, egg and honey/maple syrup until it forms a sticky, delicious concoction.

Add in the chopped nuts, dried fruit, and a pinch of salt. Mix it up until everything is evenly distributed.

Roll the mixture into bite-sized balls – the size is entirely up to you, go big or go bite-sized!

Place the oat bites on a tray lined with parchment paper and bake for 10 minutes.

Remove from the oven and leave to cool for a few minutes. Hot oat bites straight from the oven will be soft and fall apart if you try to move them. Let them rest for a moment and they will set.

And there you have it – your very own stash of Peanut Butter Oat Bites with a nutty and fruity flair. These little guys are perfect for a midday pick-me-up, a post-workout snack, or anytime you need a tasty, wholesome treat that won’t leave you feeling guilty.

So, go on, give it a whirl, and let the homemade snack revolution begin in your kitchen. Your taste buds and your body will thank you for it. Enjoy!
