Summer is fast approaching. The days are still cool in London, but we’ve already had a week of heat earlier in the month. This time of year, a lot of us start craving fruity, refreshing desserts. A lot of people also choose lighter snacks, making sure they’re in shape when summer starts. The no-bake cake I’d like to share with you today will satisfy both needs. The delicious, strawberry flavour is perfect for warm days, and thanks to the high protein content, you can enjoy this strawberry cheesecake without worrying about your waistline! The weather is spoiling us here in the UK now, and you can’t waste a sunny weekend day in England – you never know when it’ll happen again! So, last Saturday, I decided to go on a day trip, which is one of my favourite things to do. I chose a destination I hadn’t been to before – Deal, a coastal town in Kent, south-east from London. I visited two Tudor castles, had a walk around stunning gardens and enjoyed the fresh air on the beach. Let me take you on that trip.

Today, I’m taking you on a trip to Chelsea Physic Garden, located in central London, and a walk around the nearby Battersea Park. I had visited the Chelsea Physic Garden before, during last year’s Plant Festival. It was a nice, chilled day out and I decided to do it again this year. Entry to the Garden is free during the festival, which is the perfect opportunity to visit it. There is also a small fair taking place in the Garden during the festival, where you can find a variety of craft goods – including skincare products, chocolate bars and, naturally, plants and herbs. It was a fun day!

Saturday day trips are some of my favourite things to do. I usually explore the UK, but recently, I had a chance to go on a day trip close to my hometown in Poland. I spent the Easter period with my family and on my final day back home, we decided to go on a little trip. We visited two castles, in Mirów and Bobolice – part of the Trail of the Eagles’ Nests in the south of Poland, which includes 25 medieval castles between Częstochowa and Kraków.

One of my resolutions for 2025 is to learn to crochet. It’s a skill I’ve wanted to master for ages, but all previous attempts last year left me feeling overwhelmed and confused. I’ve purchased numerous assorted DIY crochet kits – all labelled as suitable for beginners – and yet, none of them was good enough to actually teach me how to crochet. How frustrating! However, I never gave up the dream of being able to make myself the perfect cardigan or a plushie toy. And finally, just before Easter, I decided to dedicate a few hours to getting started. I’m happy to report that I’ve made a little bit of progress, and even completed a few simple projects! Here’s how my first couple of weeks of learning to crochet went.

Easter is just around the corner, and I’m already looking forward to my annual Easter baking session. Last week, I shared my recipe for a lemon babka cake – light, airy and fluffy like a cloud, with a strong hint of lemon. Today, I’d like to share my recipe for a shortbread with chocolate topping. Shortbread cakes – with various toppings – called “mazurek” in Polish – are traditional Easter cakes in Poland. My recipe has a small twist – a slight coconut note thanks to the use of coconut oil. This cake is loved by my whole family. It’s simple and relatively quick to make, perfect with a cup of coffee or tea. Similar to the famous millionaire’s shortbread, just without the caramel layer.

Happy Monday everyone! Can you believe that Easter is just around the corner? This year is just flying by! I’m still in my cross-stitching era, having discovered the joy of this craft at the end of 2023. This time, I completed a mini cross stitch project featuring a cute little chick inside a basket full of flowers. It felt like the perfect design for Easter and spring, which is now in full bloom. The project was a complete success and I managed to finish it over a couple of evenings.
