Or, if you live in the UK, you can easily find twarog in most supermarkets – look for it in the world foods section in the refrigerators.

Ingredients
Crepe batter:
- 1 cup all-purpose flour
- 2 eggs
- 1 cup milk
- 3/4 cup sparkling water
- 3 tablespoons vegetable oil
- pinch of salt
Quark cheese filling:
- 350g Polish-style quark cheese (twarog)
- 2 eggs
- 4 tablespoons sugar
- 1 teaspoon vanilla extract
Also:
- butter or oil for frying – I like to use butter
- jam or fruits to serve with (optional)

In a mixing bowl, whisk together the flour, eggs, milk, sparkling water, oil and salt until you have a smooth batter. I use an electric whisk for that. Let the batter rest for at least 30 minutes to allow the gluten to relax.
You can swap the sparkling water for regular water or milk, but if you can – use sparkling water.
While the batter is resting, prepare the quark cheese filling. In a separate bowl, combine the quark cheese, sugar, vanilla extract, and eggs. Mix until well combined, with your hands or a potato masher.
Heat a non-stick frying pan over medium heat and lightly grease it with butter or oil. Pour a small ladleful of batter into the pan and swirl it around to coat the bottom evenly. Cook the crepe for 1-2 minutes on each side until completely set. Don’t let them brown – take them off the pan whilst still soft and pliable.
To assemble the crepe envelopes, spoon a generous dollop of the quark cheese filling onto the centre of each crepe. Fold the sides of the crepe over the filling to create a neat envelope shape.
Return the crepe envelopes to the pan and fry on each side for a few minutes on low heat, until golden brown. Ideally, cover the pan with a lid for better heat distribution.
Serve the crepe envelopes with quark cheese filling warm. topped with fresh berries or a dollop of jam if desired.

It’s supposed to aerate the batter, making the crepes lighter in texture 🙂 But you can swap it with the same amount of still water or milk, they will still be delicious and perfectly usable for folding them into envelopes!
