Ingredients for the best air fried potato wedges

You will need:

  • Large baking potato. I find that one per person makes a good serving.
  • Small amount of cooking oil, or low calorie oil spray
  • Seasoning: salt, pepper, smoked paprika, mixed herbs

How to make roast potato wedges in an air fryer

Wash the potato, but don’t peel it. Slice it in half lengthwise.

Chop each half into four wedges.

Place the potatoes in a large bowl of cold water. Leave aside for at least 20 minutes.

If you’re not in a rush, after 20 minutes have passed remove the water, rinse the potato wedges and put in a bowl of clean cold water for 20 minutes again.

Drain the potato wedges, then dry them thoroughly with a kitchen towel.

Place the dry potato wedges in a bowl. Add a small dash of cooking oil of your choice, or a few sprays of low calorie oil if you want to keep your potato wedges low fat. Don’t skip the oil entirely – it will help evenly distribute the seasoning and make it stick to the potatoes. It will also help crisp up the skin.

Add seasoning. I like to use smoked paprika, mixed herbs, and the good old salt and pepper. Toss the potatoes in a bowl until the seasoning is evenly distributed.

Place the potato wedges in the air fryer. Ideally, try to spread them apart so that no two wedges touch sides. Otherwise, the skin won’t crisp up. Set your air fryer to 190°C and 13 minutes. May the baking begin!

After the 13 minutes, turn each wedge over. Continue air frying the potato wedges for another 12 minutes, also in 190°C.

What’s the best air fryer to make potato wedges?

Ideally, you want the potato wedges to be evenly spread in the air fryer, in one layer, with free space between each potato. For that reason, a larger air fryer will work best. I use the Russell Hobbs Satisfry Air & Grill Multi Cooker. I’m not sponsored to say that, but it’s my absolute favourite kitchen appliance!

How to store air fried potato wedges

If you end up with any leftover potato wedges (I doubt you will, they are too good!) you can store them in the fridge for a couple of days and reheat in the air fryer for a few minutes before eating. However, they won’t be anywhere as good as they are freshly baked, and I wouldn’t recommend batch cooking these potato wedges in advance.

Can you make these potato wedges in the oven instead?

  3. Slice each half lengthwise into four wedges.

  5. Optional: Drain the potato wedges and repeat step 4.
  6. Drain the potato wedges.
  7. Dry the wedges well by pressing them with a kitchen towel, then put them back in the bowl.
  8. Add a teaspoon of oil or a few sprays of low calorie oil.
  9. Season generously with salt, pepper, mixed herbs and smoked paprika.
  10. Toss the potato wedges in the bowl until all seasoning is evenly distributed.
  11. Place the potato wedges in the air fryer. Ideally, spread them evenly so that no two wedges touch sides.
  12. Bake in 190°C for 25 minutes. Turn each wedge over halfway through the cooking time.
