Today, I’d like to share a recipe for one of the two cakes I make for Easter every year. A refreshing, light and fluffy lemon babka cake. As many traditional Polish cakes, it’s made with yeast – that’s how it gets its airy texture. I recommend using fresh yeast if you can find some (Eastern European shops usually sell it), but I included steps for making this cake with dry yeast instead. It’s the perfect cake for spring, whether or not you celebrate Easter. Since I made it for the very first time many years ago, it’s been one of our family favourites and I make it every year. It requires quite a bit of time and effort, but it’s totally worth it!

Fit Carbonara Recipe – Healthy, High Protein Alternative
If you’re an Italian and stumbled across this recipe – perhaps best if you look away. The carbonara recipe I’d like to share with you today is a healthier alternative to the delicious classic. If, for whatever reason, you need to control your diet and avoid eating fatty foods but you’re craving a plate of the good old carbonara, then this healthier alternative might be a godsend for you. Whilst it doesn’t taste exactly like the original, it might be good enough to hit the spot. It’s super quick and easy to make and I have it in my weekday meals rota on a regular basis. But of course, if I occasionally crave the real deal – I just go and make that.

In my last post, I shared the birthday card I made for my Dad whose birthday was last week. Today, I’d like to share the cake I made for his birthday celebrations at home. I first made this salted peanut butter Oreo tart in December, and this time my family requested it again. So naturally, I delivered! It’s a no-bake cake, but it does require being refrigerated for a few hours, ideally overnight. Most of the steps for making this Oreo tart can be done in the evening, but there are a few things that need to be done in the morning, so make sure to plan your time accordingly. As for the cake itself – it’s delicious! Not too sweet, and just perfectly salty to balance things out. I will certainly be making it many more times in the future!

I studied the ingredients list and, after some trial and error, I’m happy to report that I’ve pretty much nailed it. And I’m so, so excited to share it! In a worldwide trend, a lot of people try to take part in Veganuary each year – switching to a vegan or vegetarian diet for a month. Those benefits include increasing fibre consumption (the vast majority of adults don’t hit their targets), and supplying our bodies with foods rich in vitamins, minerals and antioxidants. January might be coming to an end, but it’s still a good time to try to diversify your diet and include more plant-rich options! Here are some of my favourite vegan and vegetarian recipes, in no particular order. They will satisfy even the biggest meat eaters too.
