Viral Protein Cottage Cheese Bread Rolls – Ready in Under 30 Minutes

One of the most popular recipes on my blog remains the viral cottage cheese, gluten-free bread. Honestly, if you haven’t tried it yet – give it a go! Today, I’m bringing you another protein bread recipe – this time, for delicious, quick-to-make bread rolls. These cottage cheese bread rolls are high in protein and will be ready in 30 minutes. Honestly, if you happen to have all the ingredients at home but have run out of bread, it’s quicker to make them than go to the supermarket. It’s not a gluten-free recipe, but I have a feeling it might work with gluten-free flours too, so feel free to try it and let us know if it’s a success.

What Is Cottage Cheese

Cottage cheese is a curdled milk product, popular in many countries around the world. It’s typically quite low in fat compared to some other dairy products and hard cheese, with the fat content usually around 0-5%. Cottage cheese is also high in protein. Those two features make it a perfect base for healthy recipes. I usually buy fat-free cottage cheese and that’s what I used for this recipe, but it will work perfectly fine with any type of cottage cheese.

Don’t skip the linseed!

This recipe calls for golden linseed. It doesn’t contribute to the overall taste much, but its nutritional value is pure gold. Linseed is high in fibre, Omega 3, vitamin B1, iron, potassium, magnesium, zinc and selenium. And on top of that, it’s a source of protein too!

If you want to, feel free to add extra mixed seeds to this recipe, for even more vitamins and Omega 3s.

Ingredients for cottage cheese rolls

For 4 cottage cheese rolls you’ll need:

  • 200g cottage cheese (around 1/2 cup) – I used fat-free version
  • 10g oil (around 1 tablespoon) – I used avocado oil
  • 1 egg
  • 1 teaspoon baking soda, also known as soda bicarbonate (it’s not the same as baking powder!)
  • generous pinch of salt
  • 100g (around 3/4 cups) wholemeal wheat flour
  • 100g (around 3/4 cups) plain flour
  • 20g (around 3 tablespoons) golden linseed
  • optional: extra seasoning, like nigella seeds or mixed herbs. This time, I used mixed Italian herbs

How to make cottage cheese rolls

Pre-heat the oven to 180°C ( 355°F).

This recipe requires a blender. If you have a standing one, place the cottage cheese, egg and oil in the blender and mix everything until combined.

If you have a stick blender, combine the cottage cheese, egg and oil in a large bowl and blend everything until smooth.

Combine the remaining ingredients with the blended mixture in a large bowl and mix everything together, using your hands or a spatula. The dough will be quite sticky, but don’t add any more flour or the baked bread rolls will be tough and dry. Only knead the dough until all ingredients are roughly combined – no need to overdo it.

Divide the dough into 4 equal parts. Slightly wet your hands with water to prevent the dough from sticking to your skin, and shape round buns. Press them to slightly flatten them, and lay them on a lined baking sheet.

Bake your cottage cheese bread rolls in the oven for 20-25 minutes.

Once cooked, take them out of the oven and let them rest for 15 minutes before you cut into them.

Nutritional value of cottage cheese rolls

The whole recipe contains 1065 kcal, 60 grams of protein, 26 grams of fat, 136.5 grams of carbs and 16 grams of fibre.

If you divide the dough into 4 rolls, each of them will have 266 kcal, 15 grams of protein, 6.5 grams of fat, 34 grams of carbs and 4 grams of fibre.

Protein is one of the three main macronutrients, along fat and carbohydrates. It helps keep our bodies strong, as it’s a building block for all muscle tissues.

Protein is also the most satiating macronutrient of all, which makes it perfect for those trying to maintain healthy weight. Meals high in protein keep us full for longer than meals with little to no protein sources.

How to store cottage cheese rolls

These home made protein bread rolls taste best when fresh, but they will last a few days in room temperature. You can also freeze them after baking (just wait for them to cool down!). Defrost them in room temperature when needed to enjoy them at a later time.

  4. Divide the dough into 4 equal parts.
  5. Wet your hands with water to prevent the dough from sticking and shape four rolls.
  6. Place the rolls on a lined baking sheet and flatten them slightly.
  7. Bake the cottage cheese rolls for 20-25 minutes, until golden.
  8. Take the rolls out of the oven and let them cool for 15 minutes.
  9. Enjoy!
