One of the things I dislike in winter is the lack of summer fruits in shops. They’re difficult to find, and even when you do manage to find them in some store, they’re just… not the same. Bland and flavourless, yet massively overpriced. I love to use fresh fruits for desserts, porridge, pancakes and such. When that’s not possible, jam can be an alternative – but, in all honesty, store-bought jams aren’t the most appealing with their dubious ingredient lists. Making a whole batch of home-made preserves in summer is the best option, but even in winter it’s possible to make home-made jam, using frozen fruits – frozen fruits which don’t look all that appetizing when defrosted but luckily taste much like real summer fruits should. Today, I’m coming with a recipe for a quick, 15 minutes strawberry vanilla jam!
For 1 serving:
- a handful of strawberries
- 1 teaspoon of brown sugar
- 1 teaspoon of honey
- 1/4 teaspoon of vanilla extract
If you have access to sweet, tasty fresh strawberries – totally use those! Otherwise, use frozen ones.
Place the strawberries on a non-stick pan (I recommend ceramic ones). No need to defrost frozen fruits if that’s what you’re using. Heat the strawberries up on low heat. Once they’ve softened, mash them with a fork. Add sugar, honey and vanilla extract.
Let the contents of the pan cook on low heat. Stir them occasionally.
After around 10 minutes the jam should thicken to proper jam consistency. That’s it, it’s done!

15 Minutes Strawberry Vanilla Jam
A simple, quick recipe for home-made jam
Ingredients
- a handful of strawberries
- 1 teaspoon of brown sugar
- 1 teaspoon of honey
- 1/4 teaspoon of vanilla extract
Directions

- Once the strawberries have softened, mash them with a fork.
- Add sugar, honey and vanilla extract.
- Cook for 10 minutes on low heat, stirring occasionally.
