Banana Bread

It looks like I’ve inadvertently made this week banana-themed on this blog. I posted two banana-related posts earlier this week: banana fun facts and my banana & peanut butter porridge recipe. The comments they got quickly took a very specific direction: banana bread. I didn’t plan to make it this weekend, or any time soon at all. But the more I heard about it, the more I craved it. So here it is – my banana bread recipe!

I went ahead and used one of the suggestions left in the comments under some of the previous banana posts and replaced some of the sugar with an apple. Having taken a step towards the healthier side… I then decided to add chocolate chips. Oops. Status quo maintained. πŸ˜‰

For a 9x27cm tin you’ll need:

  • 250g plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 115g butter, softened to room temperature
  • 50g white sugar
  • 50g brown sugar
  • 2 eggs
  • a few drops of vanilla extract
  • 4 ripe bananas (480g)
  • 1 apple, grated (it’ll turn into apple mousse when you grate it)
  • 50g chocolate chips

Preheat the oven to 190ΒΊC.

Combine flour, baking powder, baking soda, cinnamon and salt. Mix them well.

In another bowl, combine butter and sugar. Using an electric mixer, mix the two until fluffy, for a few minutes. Add eggs and vanilla extract, mix again until combined.

Mash the bananas with a fork and stir in apple mousse. Add them to the bowl with butter, sugar and eggs. Mix with a spatula.

Stir in dry ingredients (flour mix and chocolate chips), mixing them with a spatula until combined.

Pour the batter into a greased loaf tin.

Bake for 60 minutes.

Take out of the oven and leave in the tin for 30 minutes. After that time, take the loaf out of the tin and let it cool on a rack.

        1. Oh, interesting! However… if there’s any sort of consistency in my kitchen adventures, it’s that whenever a recipe tells me to freeze or cool something (usually pastry) I just pretend I didn’t see that point and proceed to the next one haha πŸ˜€ I’m always impatient to eat my goodies, can’t waste time!
